Pumpkin Guacamole with Pyramids bluecorn

Components for 2 portions:

  • 1/2 avocado
  • 1/2 cup finely diced hokkaido pumpkin
  • 1/2 lime juice
  • 1 clove of garlic
  • 1/2 spring onion or red onion
  • 1/2 chilli pepper
  • 1 teaspoon of coriander seeds, crushed in a mortar
  • 1/2 bunch of coriander
  • 1 tablespoon olive oil + 1 teaspoon for baking the pumpkin
  • salt, pepper
  • Pyramids bluecorn 

Preparation:

  • Preheat the oven to 200 degrees. Sprinkle the pumpkin lightly with olive oil and bake for 15-20 minutes until tender. We cool it down.
  • Dice the avocado, cut the onion into small cubes, similarly to the chilli pepper. We mix with the pumpkin and the remaining ingredients.
  • Serve the finished guacamole with tacos or in a healthier version - with blue corn pyramids
