Pumpkin Guacamole with Pyramids bluecorn
Components for 2 portions:
- 1/2 avocado
- 1/2 cup finely diced hokkaido pumpkin
- 1/2 lime juice
- 1 clove of garlic
- 1/2 spring onion or red onion
- 1/2 chilli pepper
- 1 teaspoon of coriander seeds, crushed in a mortar
- 1/2 bunch of coriander
- 1 tablespoon olive oil + 1 teaspoon for baking the pumpkin
- salt, pepper
- Pyramids bluecorn
Preparation:
- Preheat the oven to 200 degrees. Sprinkle the pumpkin lightly with olive oil and bake for 15-20 minutes until tender. We cool it down.
- Dice the avocado, cut the onion into small cubes, similarly to the chilli pepper. We mix with the pumpkin and the remaining ingredients.
- Serve the finished guacamole with tacos or in a healthier version - with blue corn pyramids
